Banana & Blueberry Protein Donuts

At last, the guilt-free vegan protein donut you’ve been waiting for...

Donuts are cropping up everywhere these days but few of them are good for you. Loaded with sugar and cooked in run-of-the-mill vegetable oil, your average donut can cause your insulin spike, a giddy feeling and hunger pangs. This baked vegan protein donut contains no added refined white sugar, has blueberries (which are low in calories,  high in nutrients, reduce DNA damage and may even help protect against ageing and cancer). The vegan protein in them will help curb hunger and reduce your need to snack. The medium-chain triglyceride (MCT) oil will help promote weight loss and fuel your brain. This could be just the mid afternoon snack to replace your coffee routine.

Preparation Time: 30 minutes

Serves: 6 donuts

INGREDIENTS

Dry

Wet

  • 3 large ripe bananas
  • ¼ cup coconut oil, melted 

Blueberry Glaze

  • 2 tablespoons of 100% blueberry jam
  • ¼ cup icing sugar
  • 2 tablespoons of cacao butter, melted
  • Desiccated coconut for decorating

 

METHOD

  1. Preheat the oven to 160 degrees Celsius
  2. In a large bowl, mix together all the dry ingredients, except for the frozen blueberries
  3. In blender, blend together the wet ingredients until smooth
  4. Fold the wet mixture into the dry ingredients to form a thick batter
  5. Gently fold in the frozen blueberries
  6. Divide the batter into the donut holes
  7. Bake the donuts in the oven for 15-20 minutes until cooked
  8. Remove from the oven and allow the donuts to cool down completely before glazing them
  9. Make the glaze: melt the blueberry jam in the microwave for 20 seconds until runny. Then whisk in the icing sugar and melted cacao butter until a smooth and shiny glaze forms.
  10. Dip the donut upside-down into the glaze, coating half of it with the blueberry glaze
  11. Decorate the donut with a sprinkle of dessicated coconut 
  12. Enjoy!!
