Makes 2 waffles
Ingredients:
40g all-purpose flour
30g whole wheat flour
20g white wolf nutrition salted caramel vegan protein blend
0.25 tsp baking soda
1 tsp baking powder
0.25 tsp cardamom
A pinch of salt
150g almond milk
5g white wine vinegar
Apples:
1 apple
½ tsp sugar
A pinch of salt
1tsp cinnamon
a splash of water
To make the waffles, combine all your dry ingredients in a bowl. Then add your almond milk and vinegar to a separate bowl and stir to combine. Wait until the mix curdles before adding it in to the dry ingredients, fold until there’s no longer any dry flour visible in the bowl, a few lumps are okay. Leave to rest while cooking up your apples.
Start by chopping your apple into cubes and adding it to a pan with your sugar, salt and cinnamon. Add a splash of water and cook while stirring occasionally until the apples are tender. Add more water as needed throughout the cooking process to prevent burning.
Preheat your waffle maker and grease it lightly with some oil or vegan butter. Add in approximately half of your mixture (the amount needed will depend on the size of your waffle maker) and cook until done. You can see that the waffle is done once there’s no longer any steam escaping from the sides of the waffle maker, then leave it in for a little while longer until it crisps up before removing the waffle. Repeat until you’ve used up all your batter.
Plate up your waffles with your cooked apples, coconut yoghurt, berries and nut butter.
