Lamington-inspired bliss balls - Australia Day

INGREDIENTS
Bliss Balls
200g raw cashews
50g almond meal
1 cup dessicated coconut
1 scoop WW vanilla protein
1/4 cup coconut oil
1/2 teaspoon sea salt
1 teaspoon vanilla extract
3 tablespoons maple syrup
Chocolate Dipping Sauce
1/4 cup coconut oil
1 tablespoon maple syrup
2 tablespoons cacao
METHOD
- Combine cashews, coconut, almonds, salt and protein powder in a blender until it forms a bread crumb like consistency
- Transfer into a mixing bowl
- Add vanilla, maple syrup and coconut oil
- Mix all the ingredients together
- Roll into small balls
- Place in the fridge for 30 minutes
- Combine melted coconut oil, cacao and maple syrup in a cup
- Dip the bliss balls into the chocolate sauce and then roll into coconut
- Store in the fridge in a container for up to 1 week
