Hot Cross Bun Protein Balls

Ingredients
For the bun:
- 3 scoops of white wolf nutrition vanilla vegan protein
- Zest of 1 orange
- 1 teaspoon cinnamon and nutmeg
- 2 teaspoons coconut sugar
- 1 tablespoon desiccated coconut
- 1 cup almond meal
- 1 teaspoon of natural vanilla bean
- 1 cup dried mixed fruits (dates, raisins, cranberries)
- 1/3 cup water
For the glaze:
- 1 tablespoon pure or no added sugar maple syrup
- 1 tablespoon cacao butter – melted
For the cross:
Note: You will need a piping bag
- 3 tablespoons coconut cream – thick component
- 1 teaspooon vanilla essence
- 1 tablespoon cacao butter – melted
- 1 tablespoon vanilla vegan protein
Directions
- Place all bun ingredients into a food processor and blend until just combined.
- Using damp hands shape into thick ‘disk’ bun shapes and place onto a lined try.
- Make glaze by combining the maple syrup and butter and brush over the buns.
- Make cross by combining all ingredients in a bowl. Place into piping bag and carefully pipe crosses onto the buns.
- Store in the fridge or enjoy immediately.
