INGREDIENTS
- 1 scoop White Wolf Nutrition Salted Caramel Vegan Protein
- 1 cup pitted dates, soaked
- 1 cup oats
- ½ cup shredded coconut
- 1 tbsp chia seeds
- Extra shredded coconut for rolling (optional)
- Dark chocolate chips (12, one per pumpkin — for the “stems”)
METHOD
- Soak dates in boiling water for 5 minutes to soften (skip if using medjool dates).
- Add all ingredients into a blender or food processor and blend until well combined.
- Roll into 12 bite-sized balls.
- Optional: Roll each ball in shredded coconut for a textured finish.
To make them look like pumpkins:
- Use a toothpick to gently press vertical lines around each ball, creating pumpkin-like ridges.
- Press a chocolate chip into the top of each ball to create a little “stem.”
- Refrigerate for 10–15 minutes to firm up, or enjoy right away!
