Satisfy Your Cravings With a High Protein Vegan Banana Slice
Banana bread has been a staple of recipe books since the 1930s. Unfortunately, it has over time become increasingly unhealthy and is usually served up gluten-rich, sugar-rich and soaked in butter. This is a remake of an old-time classic with vegan protein but this time with no added sugar as well as soy and egg free. While it will take you 30 minutes to make this protein-rich version, this well considered recipe allows you to make bigger batches which you can enjoy for longer. The vegan protein powder and coconut helps increase your metabolism and the banana and dates make it a good workout snack. Next time you are in a cafe that serves standard banana bread compare the after-effects and note how you feel. The difference between the high protein vegan version and the conventional banana bread should be obvious five minutes into your first bite

INGREDIENTS
- 4 tbs chia seeds, soaked with 12 tbs warm water
- 4 large ripe bananas, peeled
- 1 cup pitted dates, soaked in boiling water
- 4 tbs olive oil or coconut oil
- 1 scoop White Wolf vanilla protein powder
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tsp baking powder
- 2 cups oats, blended into a flour
- 1 cup shredded coconut
- ½ cup walnuts, chopped
METHOD
- Preheat the oven to 180C
- Place the chia seeds in a small container and add water to allow them to soak and absorb the water
- Place the bananas, pitted dates, chia seeds, olive oil, protein powder, vanilla, cinnamon and baking powder in a blender and blend
- Add the oat flour and blend until smooth
- Stir in the shredded coconut and chopped walnuts
- Pour into a lined baking tin and cook for around 20 minutes
- Allow to cool
