Salted Caramel Protein Pumpkin Balls 🎃

High-protein. No-bake. Almost too cute to eat. Enjoy these chewy little pumpkin bites as an energy-boosting pre-workout snack or just a spooky treat when you're feeling peckish.

Serves: 12 mini pumpkins

INGREDIENTS

  • 1 scoop White Wolf Nutrition Salted Caramel Vegan Protein
  • 1 cup pitted dates, soaked
  • 1 cup oats
  • ½ cup shredded coconut
  • 1 tbsp chia seeds
  • Extra shredded coconut for rolling (optional)
  • Dark chocolate chips (12, one per pumpkin — for the “stems”)

METHOD

  1. Soak dates in boiling water for 5 minutes to soften (skip if using medjool dates).
  2. Add all ingredients into a blender or food processor and blend until well combined.
  3. Roll into 12 bite-sized balls.
  4. Optional: Roll each ball in shredded coconut for a textured finish.

To make them look like pumpkins:

  1. Use a toothpick to gently press vertical lines around each ball, creating pumpkin-like ridges.
  2. Press a chocolate chip into the top of each ball to create a little “stem.”
  3. Refrigerate for 10–15 minutes to firm up, or enjoy right away!
